
Just because you are Keto doesn’t mean you can’t have a yummy dessert too! One super easy recipe to make is these Keto Blueberry Cheesecakes. All you need is 4 oz. cream cheese at room temperature ,1/4 cup unsalted butter at room temperature, 1/4 cup extra virgin coconut oil, 2 Tbsp. Erythritol, 3/4 cup fresh blueberries plus some for toppings, and 1 Tbsp of fresh lemon juice plus zest of 1 lemon. All you need to do is combine the cream cheese, butter, coconut oil, and erythritol in a bowl using a high speed blender. Once they are properly mixed together you may add in the blueberries, lemon juice, and lemon zest. Once this has been prepared you mold the batter into muffin tins or silicon muffin cups. Then you may lightly press the blueberries into the muffins as a topping. After this you must freeze the cheesecakes for approximately 2 hours before they are ready to eat!!!
